Dietary choices

In the past I chose diets like Keto and Pegan, which are very healthy. I did some research and it's said that high fat diets (of monounsaturated and other good fats) are good for losing weight, despite some older notions of it being really harmful to cardiovascular and heart health. I tried making up 2000-2500 calories of a 3000+ calorie diet with olive oil, and for a long time I didn't run into any problems. But, some mainstream advice dictates that consuming even healthy fats can lead to weight gain. The maximum intake of EVOO is about 2-4 tablespoons. I admit there were times when olive oil kind of slowed down my breathing, and I thought I might be clogging arteries. I limited my intake then, but now I don't bother with that food item at all and get literally 0 tbsps a day.


What I'm consuming now is lots of rice, 1 serving of chicken, eggs, and vegetables. Rice is a godsend for calories and you can buy it in bulk (and it's relatively inexpensive). I've been ranging from 1800-2300 calories daily, however I'm not sure if I should be consuming the standard 15x weight in lbs, or whether calories are essentially pointless beyond 1500. What I might end up doing is adding a couple of tablespoons of olive oil to rice to finish off my days.


I'm not 100% on calories being something to watch for if you eat healthy. Like I said, there are recommendations and there are recommendations. The point is, I'm making gains under 2500 calories daily, so it doesn't seem to be a huge factor in overall size. I'll be doing some research to find out what can be accommodated.
